Handcrafted heirloom noodles · Ukiah, California.
We use Mendocino Grain Project heirloom wheat to create our noodles from just three ingredients — flour, water, and salt. Nothing more, nothing less. Our broths are slow-cooked with care, and we source our proteins and produce from local Mendocino County farms, ranches, and fisherpeople whenever possible. Ramen Cubed started cooking in 2022, and we've been serving up soul-warming bowls ever since.
