The idea of renovating an old building in the historic center of Sassello to convert it into a restaurant, café, and winery stems from a deep connection with Sassello, a town rich in history and charm, and its surrounding area. Everything has a story, and this story is part of us, part of our family, just like Salsole, the first official name given to Sassello in 967 AD in a decree by Emperor Otto I of Saxony. That's why we decided to call the restaurant Palazzo Salsole. This conservative restoration project involved our entire family. Each of us brought something of ourselves, and the Palazzo's history became our story. Today, Palazzo Salsole is not just a restaurant but a landmark, a place where you can eat, drink, but also chat, read, smile, and remember, and from which to explore the area and its unique offerings.
