Omija is a Korean berry, known for bringing together five flavors in harmony:
salty, sweet, sour, bitter and spicy.
It expresses what I want you to feel in my dishes: to reveal a raw product through the balance created between all the elements of the plate.
It is an invitation to discovery, the reflection of my journey with the various chefs I have worked with and the trips I have made to Japan and more recently, to Korea.
This restaurant is my return to my roots in the Nantes region, a new adventure. A space of freedom to make you discover my cuisine.
With Omija, I wanted to create a place of sharing and exchange, a warm place in which you feel good.
