Louis Simart, originally from Champagne-Ardenne in the North-East of France, has been passionate about gastronomy since he was very young.
He spent his Wednesday afternoons in his mother's petticoats making his first pastries for the whole family.
He naturally followed a culinary course, CAP Cuisine, CAP Pastry, Chocolate, Ice Cream, Confectionery.
The love for chocolate came to him when he saw an Easter window of a Meilleur Ouvrier de France Chocolatier in Dijon.
For 10 years now, Louis Simart has devoted himself exclusively to this living material.
