  the story enter the former refectory of the carmelite convent in limoges. a unique place listed as a historical monument, the convent table preserves vestiges of mural paintings from the end of the 13th century . during the french revolution, jacques joseph juge de saint martin, heir and owner of the saint martin chapel in nieul, botanist and magistrate, agricultural advisor to the king and member of the dreaded jacobin club, acquired the convent and dismantled it for economic purposes. juge de saint martin retained most of the gardens, as well as the sacristy and the community hall. drawing on his expertise, he developed a nursery business there. the site subsequently housed ceramic and porcelain factories, and then, until the 1980s, the rouchaud & lamassiaude machine tool factory. in 2012, gilles dudognon, michelin-starred chef and owner of the saint martin chapel, breathed new life into the site. in this atmosphere steeped in history, the convent has been transformed into a place of living, epicureanism, and gourmet delights… there, in the sacristy, in the hearth where everything happens, where the magic takes place, our master grill chef elevates the pieces of limousin meat matured on site. at the convent, where we are only conduits, we relearn our craft, we take the time to let things simmer, to simmer... to simply let ourselves live.
