In the second half of the 19th century, my great-grandfather Giuseppe, court pastry chef to Francis II, known as “Francischiello”, was sent to Paris at just 18 years old to study the new products of the French master pastry chefs at the time of the birth of the famous miniature desserts.
When he returned to Naples he could not help but think about those small, delicious sweet morsels and began to think about how to create a new product of that size but different from pastry making.
