delphine roux's restaurant is unlike any other because you can feel the heart of its owner beating here since 1995. delphine never imagined herself as a lawyer; when she earned her law degree, she dropped everything to attend the bonneveine hotel school. “my mother was terrified—in fact, she's always been afraid of everything, she's naturally anxious—but i wanted to cook, i never imagined myself as a lawyer,” she laughs, her smile as genuine as her cooking is joyful. “ for a while, my father and i considered opening a steakhouse with a butcher and a fireplace at the entrance, but we never did.”
