back in the 17th century, in cava baja, there was the only flour mill in madrid, which became in 1642 the first inn of the court, under the protection of the arab walls, where food and lodging were given to all travelers arriving in madrid. in 1980, after succumbing to the ravages of time and facing ruin, it was rescued after two years of meticulous restoration by félix colomo, a madrid enthusiast and lover of the hospitality industry, who ensured its survival and transformed it into a traditional roasting oven. la posada de la villa has hosted many well-known figures from the worlds of politics, culture, art, and sports, as well as distinguished guests from all over spain and the world. the names of all those who have graced its excellent cuisine are inscribed on its chairs. thanks to its long and fruitful career, it has been awarded numerous prizes and decorations, including membership in the distinguished michelin guide, the international grand gastronomic collar, the national international gastronomy award, the chaine des rotisseurs, and having the great honor of being recognized by the madrid city council as a centenary business for excellence in business for the citizen.
